Monday I unintentionally slept til 9:30! What??? Susan was busy making a country style breakfast complete with bacon, scrambled eggs, fresh blueberries, English muffins, OJ, coffee... Apple butter which had a story, too which was home made at their friends' farm in Virginia. Over the course of 2 days, a slew of friends gathered to peel, core and snit the apples (48 bushels), dump them into a 2 large vats at 3 am and begin the cooking process. Sugar is added, a secret amount of cinnamon and perpetual stirring by 1 or 2 people. By 2pm the next day, the apple butter is done then funneled into jars and given away.
"It was ready when the butter was put on a plate that was angled and how fast it ran down the plate. You're cooking the water out of the apples.. So, if it ran slowly down the plate, it was ready!"
We took a break from our studies and Susan gave me a mini tour of Houston seeing the old Astro Dome, the new complex, the medical center, Rice U and just talked and talked.
